The Horror of Cancer treatment revealed

To this day I can only marvel in the resolve and bravery that Kathy had during her year of treatment. When the Cancer was first discovered she went to see the doctor at the treatment center. It was during this visit that the lung cancer was rated stage three and a mark on her back as stage four. A new x ray verified the lung Cancer but advised that the mark on the back was not Cancer. She started chemo treatments which are given in series of three  with several weeks off before starting the next series. After the second series radiation treatments were started in addition to the chemo. It was during one of the radiation treatments that the accident happened to her esophagitis. We call it an accident as the truth will never be known how the radiation treatment hit her esophagitis and caused an injury. She was not able to eat or drink and every attempt made her vomit. We called the cancer center only to be told to go to the ER. The hospital had no answers and so Kathy lived on IV fluids and pain killers. She struggled thru this period with her health failing each day. Finally she was able to keep watermelon down and several weeks later chicken noodle soup was added to her diet. She faced a decision of starting chemo again and resumed treatments for the last series. In December a final x ray was done to verify that the lung Cancer was gone. She returned home with the terrible news that bone Cancer was in her entire body and she did not have long to live. She was able to enjoy Christmas until we took her to the ER thinking she was having a stroke and a MRI revealed three Cancer growths in her brain and only weeks to live. Kathy went thru hell and this has given me new thought's about Cancer treatment in general.

Christmas Fudge

Christmas was Kathy's favorite holiday from her childhood thru Christmas 2020. As an adult she learned how to make fudge that family and friends counted the days during the holidays for their box of Christmas fudge. Michelle has become an expert in making this fudge and we will tell you what is needed and how to make it. If it does not come out right the first time just try again.
Kitchen utensils:
Large pot(stainless steel works best).
Large whip
Metal spoon
Wooden spoon
Large cookie sheet with edges
Short drinking glass w/cold water

Ingredients:
Sugar 4 cups
Blue Bonnet margarine 1 stick
Carnation evaporated milk 1 can
Kraft marshmallow cream 8 oz 2 jars
Chocolate chips 48 oz   (milk chocolate her choice)
Chopped Walnuts 1 cup
Miniature marshmallows 1 cup
Vanilla extract 1 teaspoon 

NOTE wash all utensils to remove any film as this can cause fudge to not set.

This is a start to finish needs your full attention so don't start until you are ready.
Place pot over medium to medium high heat. Add sugar, margarine and milk to pot.
Stir as sugar and margarine will turn to liquid. As liquid heats up it turns into a golden color and will start to boil. When this occurs set timer for five minutes(most batches take only 2-3) Take a drop from pot and drop in the glass of water, if it is solid you are ready if does not set you need to cook a few seconds more checking with water drop every 15 seconds. If it set you will now need to do several things at the same time. Turn off heat add Vanilla extract, marshmallow cream and stir. Pour chips in and stir as fast as possible until mostly dissolved and add nuts and miniature marshmallows until mixed. All the time you are doing this the fudge is starting to setup and needs to be spread on the cookie sheet and smoothed out.
Fudge will be ready to cut it 24 hours.
