A few years ago my brother Don and I are asking around Fall River Mills, “hey where is Paulie hanging out?”. We would always run into him somewhere in town and catch up... either at Chatty Kathi’s or Rick’s...anyhow everyone knows Paulie so they say he is cooking at the High Grade Room at the Niles Hotel in Alturas. We call down there to verify... yep he is cooking tonight. So brother Don and I pack up some wine just in case...and drive over from the Hi-Mont to get some dinner with Paulie. So we ask the waitress to just let the Chef cook whatever he wants for us. About ten minutes later Paulie comes out from the kitchen — he figures it is us and that started a long evening and night of eating and wine tasting...Paulie sat down with us for about 5 hours and many bottles... great times and great memories. Many times afterward, Paulie told us what a great evening that was...unforgettable man ...we love Paulie
