Bob the Nutritionist and Health "Nut"

This Chapter of Bob's life is for pure fun and for passing along what he taught all who would listen. He changed many lives by sharing and caring for them.  His passion for healthy living actually started in the 70's. When the "Health Nut" crazes started. Now we know that those who began eating whole foods, organic foods and more naturally where the wiser. 

He had more time than most men at this time since he had been laid off. He mentioned this happened almost every year of his life as a union man. He would travel, and or wait till the next job came through his local. This was a blessing to his family in many ways. He had more time at home with us and instead of sitting around feeling sorry for himself he focused on trying to teach his family how to eat more healthy. Mary had suffered so many health issues and he was convinced this may help her and his children. 

All three children must remember the days when out went the potato chips and junk food and in came wheat bread, wheat germ and other healthy food that we had not had until then. We missed the junk, but in time trusted our dad just wanted what was best. Dad went back to work and more of the convenient foods came back in the house. It was the way all families seem to live when mom work. The cans and boxes were made to help exhausted women try to have dinner ready after a long day of work for the family. Family dinner was always a top priority for dad. That's what held families together. He looked forward to that time of day more than any other. 

Life happened and like most families, dinner together became more difficult, Financial pressures caused mom and dad to work more and the "Health Nut" started to become content with whatever we could pull together for dinner since my sister and I cooked many meals ourselves during our teenage years. Spaghetti, chili and other easy dishes became the menu in our home. 

Years passed and we didn't hear to much about eating healthy until we lost my mother to lung cancer in 2005. Dad was always in the kitchen helping her cook and offering suggestions, but it was not until her passing in 2005, that the "Health Nut" reappeared. It was if he had wished he would have been able to change their diet before her illness to help her through it, and that he promised her he would do everything possible to live to see his grandson Clayton graduate from High School. 

That was when he took control of what he could even though he had been diagnosed with COPD 3 years early. After losing Mary, the God size strength began to resurface. He had always been an overcomer, and decided he could extend his life, surprise all who doubted him, and enjoy his family for as many years as God would grant him if he changed his diet and lifestyle.

We often talked about any years after 70 were a gift from God. He would have been 75, February 2, 1940

Avocado, Spicy Red Pepper Hummus and Warm Whole-wheat Pita Breath
Yogurt with ground flax seed (Don’t stir the yogurt)
Bran Cereal with Coconut Milk
Healthy Smoothies (The greener the better for dad)

Lunch and Dinner:


Curry Chicken (A secret family recipe of Blossom Cole)
Lentils
Kale (Only a cup of water on very low for an hour with no meat)
Collard Greens (Only a cup of water on very low for an hour with no meat)
Quinoa 
Sweet Potatos (Baked at least 1 Hour)
Brocolli (Steamed exactly 9 minutes) 
Finally diced Coleslaw
Watermellon
Blueberries

Jaclyn, Bob's only granddaughter, read the bible to her grandfather the night before he passed away. Before she left his bedside he encouraged her to remember what the scripture had told them, "Not to worry". 

Treasures in Heaven

19 “Do not store up for yourselves treasures on earth, where moths and vermin destroy, and where thieves break in and steal. 20 But store up for yourselves treasures in heaven, where moths and vermin do not destroy, and where thieves do not break in and steal. 21 For where your treasure is, there your heart will be also.

22 “The eye is the lamp of the body. If your eyes are healthy,[c] your whole body will be full of light. 23 But if your eyes are unhealthy,[d] your whole body will be full of darkness. If then the light within you is darkness, how great is that darkness!

24 “No one can serve two masters. Either you will hate the one and love the other, or you will be devoted to the one and despise the other. You cannot serve both God and money.

Do Not Worry

25 “Therefore I tell you, do not worry about your life, what you will eat or drink; or about your body, what you will wear. Is not life more than food, and the body more than clothes? 26 Look at the birds of the air; they do not sow or reap or store away in barns, and yet your heavenly Father feeds them. Are you not much more valuable than they? 27 Can any one of you by worrying add a single hour to your life[e]?

28 “And why do you worry about clothes? See how the flowers of the field grow. They do not labor or spin. 29 Yet I tell you that not even Solomon in all his splendor was dressed like one of these. 30 If that is how God clothes the grass of the field, which is here today and tomorrow is thrown into the fire, will he not much more clothe you—you of little faith? 31 So do not worry, saying, ‘What shall we eat?’ or ‘What shall we drink?’ or ‘What shall we wear?’ 32 For the pagans run after all these things, and your heavenly Father knows that you need them. 33 But seek first his kingdom and his righteousness, and all these things will be given to you as well. 34 Therefore do not worry about tomorrow, for tomorrow will worry about itself. Each day has enough trouble of its own."

It was about midnight when Clayton, Bob's youngest grandson, prayed with his grandfather and his daughter Pam. He prayed he would rest well and that he would have a good day tomorrow.
